This unpeated Cao Ila, forms part of Diageo’s Special Releases 2024. The lesser-seen style has benefitted from a short fermentation and cloudy worts, leaving us with a nutty and creamy character. Distillation in part-filled stills, resulted in a spirit with more copper contact and eventual notes of green orchard fruit.
